If you’re fond of a Bounce Ball then you’ll appreciate this cheap and easy way to create your own. If you don’t know what a Bounce Ball is then this probably isn’t for you. Unless you’re one of those people who hashtags #protein in your Instagram pictures. If you do that then you’ll love these. I’m really not one for following recipes so please excuse my haphazard measurements but I created this concoction after reading a few variations online and I’m really rather impressed.
100g cashew nuts
100g / a handful of dried pitted dates
100g desiccated coconut
1 scoop chocolate whey protein (I only used about 15g but more would be acceptable)
2 tablespoons of coconut oil
4 heaped tablespoons / 200g of low fat peanut butter (I recommend Sainsbury’s – you can use almond butter or something similar)
1 tablespoon honey / agave nectar
Whizz the cashew nuts up in a blender until you have a fine powder, add 3/4 of the desiccated coconut and all the whey protein. Mix it all together and put to one side. Melt the peanut butter and coconut oil in a bowl above a pan of boiling water. Stir together until smooth and runny. Whizz the dates until it forms a smooth paste – this could take a while, I added a splash of water to help it along. Mix the liquid buttery concoction with the date paste and add the honey. Stir in the powdered nuts & protein until combined. Roll into little balls – it should make about 14. Roll the balls in the remaining coconut and pop in the freezer for 20 minutes until firm.
They can be kept in the fridge or freezer depending on when you want to eat them. They’re about 150 calories per ball and they’re fucking delicious. I’m going to experiment with different flavour combinations over the next few weeks so let me know if you have any tips, tricks or feedback for my next batch.
